Scones are a fun and simple way to make any day feel special! These easy sourdough scones have been adapted from a regular scone recipe that I recieved from a neighbor years ago.
The first time I ever hade a scone was at a tea party that a lovely neighbor hosted when I was a teen. I have had the recipe ever since!
What is a Scone?
A scone is a kind of rich, often slightly sweet biscuit that is popular in The United Kingdom and Ireland. It is often served with tea and is perfect topped with jam. lemon curd, or clotted cream.
When Do You Serve Scones?
My favorite time to serve scones is at a tea party of some kind; whether that is a simple poetry teatime with my children or a more formal tea with a group of ladies.
But I don’t save scones for teatime only! I enjoy making them for breakfast along with scrambled eggs or making them savory to serve alongside soup.
Why Make Sourdough Scones
This scone recipe started off as a regular non sourdough recipe. I decided to try adapting it to sourdough for a few reasons. The proccess of sourdough can help make flour products healthier for your gut and easier to digest by breaking down the gluten. I also like that these sourdough scones can be made the night before and then baked in the morning for breakfast, Anything that can be prepped the night before makes my mornings flow much smoother!
How I Converted A Regular Recipe to Sourdough
To make this scone recipe into a sourdough version I simple looked at the liquid in the recipe and simply switched a portion of that out for sourdough starter. So in the original recipe it called for 1/2 cup of cream, in my sourdough version I reduced the cream to 1/4 cup and added 1/4 cup of starter. After I mix the dough I allow it to ferment overnight to get all the benefits of sourdough. The rest of the recipe and the proccess I follow as written.
Making The Sourdough Scones
Making sourdough scones is a very easy proccess. One of the keys to a good scone is working the butter into the dry ingredients before adding any wet ingredients and then not over mixing them.
Here are the basic steps to make sourdough scones:
- Mix all dry ingredients in a bowl.
- Cut in the butter until crumbly
- Add wet ingredients and mix until it just comes together
- Cover and ferment overnight in the fridge
- Flatten dough into a circle and cut into wedges
- Bake
Sourdough Scone Recipe
Easy Overnight Sourdough Scones

2 cups flour
1 Tbsp. baking powder
1 tsp. salt
3 Tbsps. sugar
5 1/2 butter, cut into pieces
1 egg beaten
1/4 cup cream or milk
1/4 cup sourdough starter, can be cold
2 Tbsps. melted butter
Sugar for sprinkling
Directions
- Preheat oven to 425F
- Combine first 4 ingredients in a bowl and mix well.
- Using a pastry cutter cut butter into dry ingredients until it resmbles coarse crumbs.
- Add beaten egg, cream, and sourdough starter. You can use cold starter straight from the fridge. Feed the starter and place back in fridge.
- Mix until dough just comes together. Don’t over mix.
- Roll out into a 11 inch tall circle on a well floured board. Cut into 8 wedges.
- Place on a baking sheet and brush with melted butter and sprinkle with sugar if desired.
- Bake at 425F for 12- 15 minutes
Notes
- You can add chocolate chips, dried fruit or other add ins for fun flavors. For savory scones reduce the sugar and add grated cheese and herbs.
