I love this time of year! Everything is green and alive! We have been busy working in the garden; preparing, planting, hoping. The first of the coming harvest is nearly ready. Fresh lettuce and greens for salads are beginning to be abundant. This dried tomato salad dressing is one of my favorite ways to enjoy fresh greens!
Delicious dressings for garden salads are one of the simplest things to make from scratch. It is so rewarding to whip together a tasty dressing using a few quality, healthy ingredients.
In this dressing I use tomatoes that I dehydrated from last years garden. Drying is one of my favorite ways to preserve some of my tomato harvest. I use them on pizza, in pasta sauce, and of course in this tangy dressing.
The other ingredients in this dressing pair perfectly with the tomatoes- a bit of basil, fresh or dried works, a clove of garlic, olive oil, apple cider vinegar(I like to use a nice raw one in salad dressing), a dash of salt and pepper.
It is easiest to use a blender to mix everything. I simply place everything except the oil in first and blend well. Then I add the oil in a slow stream whil blending util smooth and creamy! Enjoy!
Dried Tomato Salad Dressing
Ingredients
- 1 handful dried tomatoes
- 1 cup olive oil
- ½ cup apple cider vinegar
- 1 clove garlic, crushed
- ½ tsp. dried basil
- Salt
- Pepper
Instructions
- Combine ingredients in a blender and blend until smooth. Toss with salad or pour over individual servings.

I haven’t tried this yet, but I can already tell that I’m going to love it. I just need to get some dried tomatoes. I remember a time when I’d never even considered making my own dressing, and now I can’t imagine anything better on my salads. They’re so simple and delicious!
