I have loved granola ever since I was a little girl. I can remember my parents taking me to a local cafe for breakfast occasionally when I was very young. I always had a bowl of crunchy granola with yogurt. I have been making my own granola ever since starting my own family. Most recipes for granola seem to make only a small batch, which means they are hardly worth the trouble because it disapears so quickly in a large family! But this large batch homemade granola recipe is just right !
I love to have granola on hand as an alternative to sugary cold cereals for those rushed mornings when when we are heading out the door to homeschool co-op or a nature hike. A bowl of granola, with your desired milk or yogurt, plus some fresh fruit make for a quick, satisfying and pretty nutritious breakfast.
Not only is this large batch homemade granola delicious it is very economical to make! I get my ingredients from the bulk section of our local grocery store or order them through Azure Standard.
This recipe is so simple and easy- the only thing is it takes a while to bake, so it is best to plan to make this large batch homemade granola on a day you will be home.
Now on to the recipe!
Ingredients:
1 cup butter or coconut oil
1/2- 1 cup cane sugar or honey
1/2 cup water
1 tsp. vanilla extract
7 cups rolled oats
2 cups flour of your choice
2 cups shredded coconut
1 cup sliced almonds
1 cup dried blueberries
Instructions:
- Place butter or coconut oil, sugar or honey, water and vanilla in a large roasting pan. Place in the oven and melt the butter while the oven preheats to 250 degrees F.
- Once butter is melted and the sugar is dissolved remove pan from the oven. Add all the dry ingredients except the blueberries. Stir well to combine. Place back in the oven and bake for about two hours -stirring every twenty minutes.
- When it is golden and crunchy remove from oven and allow to cool completely before transfering in to a jar or container. This will last for at least a month in the pantry, although we usually use ours up before then!
