Garlic Potato Frittata
Ingredients
- 3 Tbsp. butter
- 1 medium onion, chopped
- salt and pepper to taste
- 2 lbs. potatoes, cubed
- 2 cloves garlic, sliced
- 3-4 Tbsp. olive oil
- 4 eggs
- 1 1/2 cups cheese
- 1/4 cup Italian bread crumbs
- 1 tsp. oregano
- 1 tsp. rosemary
- 2 tsp. ground pepper
- 1/2 tsp salt
- paprika for sprinkling
Instructions
- In a skillet over medium heat melt the butter. Add onion, season with salt and pepper and saute for 5 minutes.
- Add potatoes, cover and cook for 15 minutes.
- Add garlic and cook uncovered until potatoes are tender and brown, about 20 to 30 minutes.
- Preheat oven to 375 degrees F.
- In a large bowl beat the eggs. Fold in the cheese, bread crumbs herbs, salt and pepper.
- Add to potato mixture. Pour into a round cake pan. Sprinkle with paprika.
- Bake for 30- 45 minutes or until set and browned.
